Sorting and waste management in collective catering
In collective catering, the selective sorting of waste is essential as well as perfect hygiene according to HACCP standards (Hazard Alanysis Critical Control Point), which is a method designed to detect all the hazards that may arise during storage, preparation or presentation of food.
Waste bins must be properly identified and used to separate different types of waste (e.g., food waste, packaging, glass, etc.). Waste containers for food waste in particular must be emptied regularly to avoid odours and the growth of bacteria.
To help you in this waste sorting process, here are some good tips:
Clean and Disinfect your terminals:

- Garbage cans must be cleaned and disinfected frequently. Use suitable products to remove waste and germs.
- Instead of using bleach, prefer white vinegar, which is much more environmentally friendly and just as effective for disinfecting your indoor bin.
- For quick and easy cleaning first rinse the inside of your trash can with warm water. Then, with soapy water and a brush, clean the outside and inside of your trash can. Rinse it and let it dry or if you need to use it immediately wipe it well with a cloth.

- For a good maintenance, it is necessary to follow certain instructions and use the appropriate tools.
- Use soapy water (soap or dishwashing detergent) or a special product for stainless steel, a soft non-abrasive sponge, a soft cloth to wipe after cleaning, for better rendering.
Location and Storage:

- Place garbage cans in appropriate areas, away from food preparation and serving areas.
- Avoid storing garbage cans near food storage areas to reduce the risk of cross-contamination.
Staff Training:

- Educate staff on the importance of garbage hygiene. They need to know how to use them properly and how to manage waste safely.
- Encourage hygiene and general cleanliness around the bins.
